Turkey Chili

Ingredients

  • 3.3 lbs (1.5 kg) 41187 Readyfoods Pulled Turkey Breast – Plain or 41471 Butterball Semi-Boneless Turkey Roast (cooked)
  • 1/2 cup (125 mL) Vegetable Oil
  • 1/2 lb (250 g) Onions, diced
  • 4 cloves Garlic, minced
  • 2 tbsp (30 mL) Chili powder
  • 1 tbsp (15 mL) Oregano, dried
  • 1 tbsp (15 mL) Cumin
  • 1 tbsp (15 mL) Smoked, paprika
  • 2 tsp (10 mL) Cinnamon
  • 3 cups (750 mL) Chicken broth, prepared, sodium reduced preferred
  • 6 cups (1.5 L) Tomatoes, canned, diced, undrained
  • 3/4 cup (375 mL) Tomato paste, canned
  • 2.2 lbs (1kg) Mixed Bean Medley, frozen

Directions

  1. Cut cooked turkey into bite-sized pieces.
  2. Heat oil in a large stock pot. Saute onions and garlic on low-medium heat.
  3. Add chili powder, oregano, cumin, paprika and cinnamon, stirring to coat and become aromatic.
  4. Add cooked turkey, broth, diced tomatoes, tomato paste and bean medley.
  5. Simmer chili on medium heat until thick, approximately 30 minutes or until internal temperature is 165°F (74°C).
  6. Serve with optional garnishes such as sour cream and/or chopped green onions.
