Fiesta Turkey Soup
Ingredients
- 1.7 lbs (750 g) 41187 Readyfoods Pulled Turkey Breast – Plain or 41471 Butterball Semi-Boneless Turkey Roast (cooked)
- 12 cups (3 L) Tomatoes, canned, diced, undrained
- 2 tbsp Paprika
- 2 tbsp Oregano
- 2 tbsp Chili Powder
- 1 1/2 cups Carrots, diced
- 1 1/2 cups Celery, diced
- 2 cups Onion, diced
- 2 tsp Salt
- 2 tsp Pepper, black, ground
- 4 cups Vermicelli pasta noodles, dry, broken
- 2 tbsp Cilantro, chopped (optional garnish)
Directions
- Prepare turkey as per package directions, and chop roughly into bite-sized pieces. Set aside.
- In large stock pot or soup kettle, bring water and tomatoes to boil.
- Add paprika, oregano, chili powder, carrots, celery, onions, salt and pepper and stir to combine.
- Bring to a boil, and then turn heat to medium-high and boil for 10 minutes.
- Add in turkey and pasta, and cook for an additional 5 minutes until noodles are soft. Then reduce to simmer.
- Ladle into bowls using 6 oz (175 mL) ladle. Optional garnish with chopped cilantro.
