Preparation & Cooking Methods

Rational Oven

Preheat oven to 375°F (190°C) with fan #3 set to 100% humidity. After cooking for 30 minutes, lower temperature to 300°F (150°C), humidity still at 100%. Cook for one hour. Lower temature to 265°F (130°C) and steam for 2 hours. Finally, cook at 325°F (163°C) with probe until finished, approximately 1 ¼ hours.

Combination Oven

Thaw turkey in refrigerator for 4-5 days. Preheat oven to 320°F (160°C), set oven humidity to 40%. Remove from bag, place on tray in preheated combination oven. Roast for approximately 35 minutes/kilogram. Cook until a minimum internal temperature of 180°F (82°C).
