Preparation & Cooking Methods

Conventional Oven

Cook from frozen: Do not remove bag. Do not puncture bag. Place roast in pan with 1” of water. Roast at 325°F (163°C) for approximately 4-4.5 hours. Cook until minimum internal temperature of 165°F (74°C).

Combination Oven

From Frozen: Do not remove or puncture bag. Preheat oven to 320°F (160°C), set oven humidity to 20%. Place in pan with ¼ inch of water. Roast for approximately 1 hour/kilogram. Cook until a minimum internal temperature of 165°F (74°C). From Thawed State: Preheat oven to 320°F (160°C), set oven humidity to 40%. Puncture bag. Place in pan on a rack with ¼ inch of water. Roast for approximately 37 minutes/kilogram. Cook until a minimum internal temperature of 165°F (74°C)
